Just having fun here. The Gungan tech is rather advanced in several domains, especially in the shield department. I found it interesting to speculate about what kind of space travel capable warships they'd have come with, their defenses and weapons, first as pure Gungan ships, secondly as Gungan and Naboo techs merged together.
Logically in the second case the warship would be much more traditional in the sense that it would use a variety of hull hugging shields and turbolasers, plus some torpedoes I guess. It would surely come with hyperdrives.
The Gungans, on the other end, weren't exactly impressive in the weapon department, but I found their portable shields were rather exceptional, with one massive advantage: besides being working from minimal hardware, once upscaled to a warship level of combat, they would a counter defense of excellence in that they could, with proper alignment, redirect turbolaser fire at the enemy.
Those modible screens would stick outside of an upscaled theater shield cast all around the warship, and would be manipulated by arms and cables, so they could be lost without endangering the ship.
The Gungan warship would close the distance, and once a few kilometers away from the target, start shooting large Boomas.
The launching system would probably be something between a low tech mass driver or even an energy catapult that uses angular momentum and stops at 90°. Eventually, considering that the Gungans had a variety of force fields particularly efficient at repelling water, it's possible they could use an off shot of that principle to "repel" Boomas in the right direction.
Then, if you pick the stuff from the EU, the Gungans actually came with missiles, armoured naval combat ships and with short range laser cutters. If those last systems were upscaled as well, we could see the Gungan warship needing to come to near physical contact with the targeted warship, and extended several arms/tentacles that would sport such bow shaped lasers, cut through the shields and then the hull.
Eventually, the warship may extend a tube a lay the equivalent of eggsacs full of super-Boomas into the wounds on time fuse, leave and let them explode.

Why do I now have mental images of the mass drivers being catapults and starfighters passing effortlessly through their deflector shields?

The big problem with this is how well any of these technologies will scale up to the starship sizes commonly seen in SW as well as how much energy they actually dissipate or dish out. The shields that were carried by the big animals would be the easiest since their field coverage was fairly impressive, covering several hundred meters, and could withstand Trade Federation tank blaster fire for several minutes without any sign of leakage or weakening.
