As far as the trash compactor scene is concerned, in the video here, you can see that around 0:48 Han's shot is not at the red glowing control panel on the right side, but at the left side only centimeters from the doorjamb seal. Was he trying to break the seal and have the door slide open? We know Han's a decent enough shot so he should've been able to hit closer to center, if his goal was simply to blow a hole in the hatch.

As for the original Cell Block AA-23 scene with Luke blowing open the cell door, there is just no way to reconcile it with the final as-filmed version, except maybe that Luke could see he could open the door by pushing a button, and thus sparing Leia from being hit by hot debris or a stray blaster shot. And on top of that it really doesn't matter since the door blasting scene is directly contravened by the movie, and the closest we get to that kind of firepower is Leia shooting the garbage chute grate, which I wouldn't even begin to put in the same league as the heavily reinforced cell door.

Certainly, the grate scene doesn't come close compared to that.
